I thought it might be fun for folks to share recipes they have made out or read about cooking nutria. I usually just skin it and let the meat cook over hot coals. In the summer when I have folks over I will stuff it with salal or huckle berries and pit cook it, which is d-lish.

07/29You are doing a good thing here, a service to all. These creatures are half the reason South Louisiana will eventually disappear under the Gulf of Mexico (the other half being a composite of oil companies, Army Corps idiots and corrupt politicians). Nutria are eating and shitting all the wetlands down there, fucking faster than rabbits, and leaving everything exposed to hurricanes.
I have probably only eaten Nutria by mistake -- in some restaurant passing it off as aligator stew. But here's a recipe from a Cordon Bleu chef!
